Bake chicken (seasoned to your liking) and sweet potato in oven
35-40 minutes on 350. Dice and sauté pepper and Zucchini with
minced garlic and seasoning for 8 mins (until golden brown)... Add
in artichoke hearts and sauté another couple of minutes. Let
chicken cool and dice, then add to veggie medley. Slice sweet
potatoes down the middle and stuff 'em!
