In a large sauce pot, combine shredded coconut, wine/port, apples, raisins, dried plums, and dried cherries. Bring to a simmer over medium heat and reduce heat to low. Stir regularly and simmer for 10 - 15 min., allowing apples to soften and liquid to reduce.
Stir in cinnamon, salt and nuts. Mix to combine. Remove from heat and allow to sit and flavors to meld for 5 min.
Can be served warm or cooled and refrigerated. Will keep in refrigerator, tightly sealed, for a week.
