1 bunch asparagus, roughly chopped into 2-inch pieces
1 1/2 lbs peeled/deveined medium shrimp
1/2 cup chopped fresh basil leaves
Juice of 2 lemons
1/2 cup crumbled feta
Instructions
Cook orzo. Set aside and toss with oil.
Add oil to skillet. Add garlic and chili flakes, about 1 minute. Add asparagus, cook 3 minutes. Move asparagus to sides and add shrimp. Cook, turning occasionally, until pink and opaque (~4 minutes).
Add orzo, basil, lemon juice, EVOO and feta.
