     Clam Chowder

Category   Salads - Soups - Sidedishes
Sub Category   None

Ingredients
a. 3 slices bacon
b. the juice of 2 cans clams with juice(save clams)
b. 2 golden potatoes peeled and cut into chunks
b. 1/2 cup carrots cut up
b. 1/2 chopped onion
b. chicken broth/water to cover
c. 1/4 cup and 2 tablespoons butter
c. 1/4 cup and 2 tablespoons flour
c. 2 cups half and half cream

d. generous tablespoon red wine vinegar
d. 3/4 teaspoon salt
d. pepper to taste
d. clams that had juice drained (I used 1.5 instead of 2 cans)

Instructions
Cook bacon in large pot. Remove and cut up. Return bacon to the pot.
Add the B mixture to the bacon grease. Cover with water and/or chicken broth. Cook mixture over medium heat until the vegetables are tender (around 25 minutes).
Melt butter over medium heat. Whisk in flour until smooth. Whisk in cream and stir continuously until it is thick.
Add the cream mixture to the broth. Heat though, but do not boil. Add the D mixture and heat clams. Do not over cook, as clams will get tough.
