Place dried beans and 8 cups water in a large stockpot. Cover and allow to soak for 8 hours or overnight. Drain. Place soaked beans and 8 cups fresh water in your slow cooker. Add all remaining ingredients. Cover and cook on low 10 - 12 hours, or on high 5 - 6 hours, or until the meat is falling off the bone and the beans are tender but not mushy.
