     Paleo Frittata Muffins

Ingredients
1 dozen eggs
1/2 lb hot sausage, cooked
1 green and/or red pepper
Onion
Baby Spinach
Salt and Pepper
Cooking Spray
 

Instructions
Preheat oven to 350 degrees and spray a muffin tin, set aside.
On medium high, heat a skillet and add meat, bell pepper and onion and cook until soft and meat is brown, about 10 min. When the vegetables are cooked, add the spinach and let it cook all the way down, stirring occasionally, about 5 minutes. Spoon enough vegetable mixture into each muffin cup to fill it about a third of the way.
In a separate bowl, whisk together the eggs and season with salt and pepper. Pour enough egg mixture into each muffin cup to fill it almost to the top, leaving about an eighth of an inch of space. Bake for 20-24 minutes.
