     Carrot Cake with cream cheese frosting

Ingredients
2 cups flour
2 cups sugar
1 tsp soda
1/2 tsp salt
1 cup plus 1 Tbsp cooking oil
4 eggs
3 cups grated carrots
1 tsp cinnamon
pam spray
 
FROSTING:
8 oz cream cheese
1 box powdered sugar
1 stick margarine
2t tsp vanilla
1 can coconut
3/4 cup chopped pecans

Instructions
Prehear oven to 350 degrees. Mix together four, sugar, soda and salt. Beat in cooking oil Beat in eggs one at a time Stir in carrots and cinnamon Spray 9x13 in pan Pour cake batter in cake pan Bake at 350 degrees for 55 minutes Cool completely before frosting.
Frosting: Combine cream cheese, powdered sugar, margarine and vanilla Beat until smooth Add coconut and pecans and mix well Spreadh frosting on completely cooked cake Cover cake and refrigerate until time to serve Refrigerate leftovers.
