1 1/4 cup all purpose flour 1 cup bread flour ( I used for pizza etc) 2tsp baking powder 1/2 baking soda Pinch of salt 4oz cubed mozzarella (do not use buffalo or the water one) 2tbs chopped fresh basil 1/3 cup chopped sun dried tomatoes 2 eggs 2 1/2 tbs extra virgin olive oil 1 1/4 buttermilk. (I made my own with skimmed milk and white vinegar) Pre heat oven. Grease pan with some butter. Mix flour, baking powder, soda, and salt. Mix well. Add basil, tomatoes and mozzarella. Mix until incorporated well. In a separate bowl beat the eggs, add oil and buttermilk. Whisk together. Pour the liquid in the dry mixture with a wooden spoon and stir until ingredients are well combined. (Sticky dough) Transfer the dough to the pan and spread evenly. Bake for 40-45 mins. Careful as it might burn from top. I left oven on minimum for the first 20 mins.
