INGREDIENTS- 3oz butter 1 large egg ¼ tsp vanilla essence 4oz self raising flour 1oz cocoa powder 1oz drinking chocolate powder ½ tsp baking powder Pinch salt 3 fluid oz Guinness Draught 300 grams cream cheese 150 grams icing sugar 125 ml double cream (or whipping cream) FOR THE TOPPING- 8 oz cream cheese 1 ¼ cups icing sugar ½ cup double cream (or whipping cream) RECIPE- To prepare tins- Grease, dust with flour and shake out surplus. Cream the butter, add the sugar gradually and continue beating until mixture is light and fluffy. Beat in the egg yolk and vanilla essence. Sieve all the dry ingredients together thoroughly and stir into the creamed mixture alternately with the Guinness. Lastly, fold in the stiffly beaten egg white and divide equally into the prepared tins. Smooth the tops and bake at 375° F or gas mark 5 for 25 minutes. Run around the sides with a knife, but leave in the tins for about ½ hour before turning out.
TO CREATE THE TOPPING Whip the cream cheese lightly until smooth, then sieve the icing sugar in and then beat them both together. Add the cream and beat again until it makes a consistency that is easily spreadable. Ice the top of the cake so that it resembles the top of a glorious pint of the black stuff!
