     Roasted Chicken with artichokes and mushrooms

  Dry red wine

Ingredients
2 lbs chicken
1 15 oz can artichoke hearts
1 lb diced white mushrooms
2 diced shallots
1/2 red wine
1/4 red wine vinegar
4 cloves garlic (minced)
1/4 cup fresh diced basil
1 tablespoon olive oil
 
1 teaspoon thyme
1 teaspoon oregano
Salt and pepper

Instructions
Preheat oven to 350. Mix all of the ingredients into a mixing bowl. Place in a baking dish and bake for 45 minutes.

serve with a nice salad
