     Scallops w/Pineapple-Tamari Glaze

Ingredients
1.5 - 2 lbs. sea scallops, patted dry
1T coconut oil
1 tsp. salt
1/2 tsp. pepper
1 c pineapple juice
1 clove garlic, minced fine
2T tamari
1T agave syrup
1T rice vinegar
 
1/2 tsp. allspice
1/8 tsp. cayenne pepper
1/2 tsp. ground ginger

Instructions
In small sauce pot, combine pineapple juice, garlic, tamari, agave syrup, rice vinegar, allspice, cayenne pepper and ginger. Bring to boil and then reduce to low heat to simmer, uncovered, for 10 - 15 min., or until liquid is reduced by one half to two thirds and becomes slightly syrupy in consistency. Let sit off heat.
Heat oven to low broil setting and toss scallops evenly with coconut oil on all surfaces. Place in single layer on broiling pan that has been greased with non-stick spray or coconut oil. Sprinkle scallops evenly with salt and pepper.
Place pan on top rack and broil for 3 - 5 minutes per side, being sure to flip once edges have become lightly golden. Remove from heat once scallops are no longer opaque and are lightly browned on either side.
Remove scallops from oven and Drizzle evenly with pineapple glaze, reserving additional glaze for serving.
Serving Suggestions
Serve over rice if desired.
