     Mexican Manicotti (Susan)

Ingredients
8 oz package manicotti shells
1 teaspoon salt
1 pound ground beef
1/2 cup onion, diced
2 cups cottage cheese (small curd)
2 cups shredded cheddar, divided
1 teaspoon chilli powder
1 teaspoon garlic powder
1 teaspoon cumin
 
2 (15 oz) cans tomato sauce
1 (4 oz) can green chiles, chopped
1/2 cup water
1/4 teaspoon cayenne pepper (optional)
salt & pepper to taste

Instructions
Fill a large, deep pan 1/2 full of water and add manicotti shells- cook for half the time recommended on the package directions. Drain manicotti and set aside. In a skillet, brown ground beef and onion. Drain excess grease and cool slightly.
In a large mixing bowl, combine cottage cheese, 1 cup shredded cheese, chili powder, garlic powder and cumin. Add the meat mixture and mix well. In another bowl, mix together tomato sauce, green chiles, water, cayenne pepper, and salt & pepper.
Place approximately half the tomato sauce mixture in the bottom of a lined 9x13 dish. Stuff parboiled manicotti shells with beef/cheese mixture and place over the layer of sauce. Pour the remaining half of sauce over the shells. Top with remaining 1 cup of shredded cheese.
In a preheated 350 degree oven, bake for 45-50 minutes or until hot.
