     Merv Bourgeouis Red Beans and Rice

Ingredients
6 lbs Red Kidney Beans
10 lbs Smoked Sausage
6 Onions-chop
4 Bell Peppers-chop
1 Bunch Celery-chop
Garlic powder (to taste) or 10-12 garlic cloves, chop
Salt-to taste
Pepper-prefer to use Tony Chacheres- to taste
 

Instructions
Soak beans overnight. Drain beans, fill with fresh water, to cover. Bring to boil, add chopped veggies and garlic.
Brown sausage, under broiler. Reduce heat of beans to medium, cook until tender, 2 hrs.
Add sausage and continue cooking, 2 more hours, cooking down until thickened. You may smash a portion of the beans to help thicken sauce.
Near end of cook time, add salt and Tony Chacheres. Slice meat and Serve over Cooked white rice.
