     Vodka Sauce

Ingredients
3 cups of Marinara Sauce (as outlined in this book)
1 cup vodka
1/2 cup heavy cream at room temperature
1/2 cup parmesan cheese -gratted
1/2 tsp of salt or more to taste
1/2 tsp fresh ground pepper or more to taste
 

Instructions
In a heavy skillet simmer the marinara sauce and the vodka over low heat, stirring often x 20 minutes. Stir in the cream and continue to simmer over low heat until the sauce is heated through. Remove the skillet from the heat and stir in the Parmesan, salt and pepper.
Pour over pasta noodle of your choice usually rigatoni or penne
