Wash the greens and drain well. Finely chop the spinach, green onions and onion. To the onions, add salt and pepper, then mix well with the green onions and spinach, adding oil and lemon juice.
Working quickly, roll out the dough like a pie crust. Cut into 4 inch rounds. Place a heaping tablespoon of the filling on each round, making sure to keep the edges of the dough clean. Wrap the dough closed in the shape of a triangle. Mom left the middle slightly opened. (Some do not.) Seal the wrap by pinching each seam closed. If you have trouble closing the seam, dip your fingers in flour.
Grease the bottom of a baking sheet with oil and place the pies in rows. Bake at 400 degrees until golden brown.
