-Bring water to a boil in a medium saucepan. Add rice and simmer until tender, about 10 min
-Fluff rice with fork and transfer to a medium bol to cool.
-Break up tuna wiht a fork and add to bowl with arugula, currants, olives, and pimentos; gently toss to combine.
-Whisk together lemon jiuce, mustard and oil in a small bowl.
-Pour over rice miz and gently toss mix. Season with salt and pepper to taste
-Serve over baby spinach.
