     Sicilian Tuna and Brown Rice Salad

Ingredients
2 1/2 c water
1 1/2 c instant brown rice
1 8-oz can water-packed tuna, drained
2 c torn (or baby) arugula leaves
1/4 c dried currants
6 pitted green olives, chopped
1 4-oz jar diced pimentos, drained
2 tbs fresh lemon juice
1 tbs dijon mustard
 
1 tbs olive oil
Salt and freshly ground black pepper

Instructions
-Bring water to a boil in a medium saucepan. Add rice and simmer until tender, about 10 min -Fluff rice with fork and transfer to a medium bol to cool. -Break up tuna wiht a fork and add to bowl with arugula, currants, olives, and pimentos; gently toss to combine. -Whisk together lemon jiuce, mustard and oil in a small bowl. -Pour over rice miz and gently toss mix. Season with salt and pepper to taste -Serve over baby spinach.
