2 CUPS COOKED QUINOA
2 CUPS CHOPPED KALE
ADD ANY OR ALL OF FOLLOWING BEFORE ADDING DRESSING
1/2 CUP BLACK OLIVES, SLICED
1/2 CUP GREEN ONION WITH TOPS SLICED
3/4 CUP FETA CHEESE CRUMBLED
MARINATED ARTICOKE HEARTS DRAINED AND CHOPPED
1/2 CUP PECANS OR ALMONDS
 
DRESSING- COMBINE AND SHAKE
6 TABLESPOONS OLIVE OIL
4 TABLESPOONS LEMON JUICE
1 TABLESPOON DIJON MUSTARD
1 LARGE GARLIC CLOVE MINCED

Instructions
COMBINE AND SHAKE 6 TABLESPOONS OLIVE OIL, 4 TABLESPOONS OF LEMON JUICE, 1 TABLESPOON DIJON MUSTARD, AND ONE LARGE GARLIC CLOVE.
COMBINE COOKED QUINOA AND CHOPPED KALE. ADD DESIRED INGREDIENCE. MIX SALAD ALL TOGETHER AND ADJUST W/MORE LEMON JUICE AND OR SALT AND PEPPER.
