     Waldorf Red Velvet Cake

Ingredients
3040g Sugar
32e Whole Eggs
3qt Canola Oil
80g Vanilla Ex
24oz 64 Cocolate (melted)
1920g AP Flour
90g Baking Soda
20g Salt
2 10Lb cans Beets (drained)
 
1 1/2 tsp Red Food Coloring

Instructions
Drain beets, robo coupe then strain excess water from beets.
Sift dry ingeredients. Whip eggs, sugar, oil, vanilla together to ribbon stage. Add melted chocolate and mix. Add pureed beets mix well. Add dry ingredients mix until fully incorporated. Scale into pans.
yields 24 9 inches at 18oz each. Sheets are 6Lbs each
