     Salad- Thai with Peanut Dressing

Ingredients
DRESSING
3 T. water
2 T. rice wine vinegar
1 T. chopped green onions
1 T. reduced-fat peanut butter
1 T. low-sodium soy suace
1 tsp. grated peeled fresh ginger
1 tsp. Srirahca (hot chile sauce)
1 tsp. dark sesame oil
 
2 tsp. dry-roasted peanuts
SALAD
2 c. mixed baby salad greens
1/2 c. fresh bean sprouts
4 cherry tomatoes, quartered
2 T. vertically sliced red onion
2 T. fresh mint leaves
2 T. fresh cilantro leaves
6 baby carrots, peeled

Instructions
To prepare dressing, combine all ingredients except peanuts in blender; process until smooth.
Add peanuts; process 10 seconds.
Divide salad ingredients evenly between two plates and drizzle each salad with 1/4 c. dressing.
