     Mixed Greens Salad with Thyme Vinaigrette

Ingredients
1 bag washed greens, Arugula or Spinach
1/2 pint grape tomatoes, sliced in half
1/2 c blue cheese, crumbled
1/4 thyme vinaigrette
Thyme Vinaigrette
1/4 c champagne vinegar
2 t fresh thyme leaves, minced
1 T Dijon mustard
 
1/8 c honey
1/2 - 3/4 c olive oil

Instructions
Place the champagne vinegar, thyme, mustard and honey in a mixing bowl. Whisk to combine. Briefly whisk the vinegar mixture while adding the oil a few tablespoons at a time until a smooth consistency is reached. Salt and pepper to taste.
Toss greens with a little salt and pepper. Arrange on a plate with tomatoes and cheese. Drizzle vinaigrette over salad just before serving.
