Place the champagne vinegar, thyme, mustard and honey in a
mixing bowl. Whisk to combine.
Briefly whisk the vinegar mixture while adding the oil a few
tablespoons at a time until a smooth consistency is reached. Salt
and pepper to taste.
Toss greens with a little salt and pepper. Arrange on a plate with
tomatoes and cheese. Drizzle vinaigrette over salad just before
serving.
