     Sweet Potato Souffle

Ingredients
Filling-3 C cooked mashed sweet poatoes
3/4 C sugar
1/3 C butter,melted, cooled,salted
2 eggs, slightly beaten
1/2 tsp salt
3/4 C evaporated milk
Topping-
1 C chopped pecans
 
2/3 C brown sugar
2/3 C shredded coconut
1/3 C butter, melted
1/3 C flour

Instructions
Bake sweet potatoes in 425 oven for 60 min. Cool enough to handle. Peel and mash. Mix together all the filling ingredients. Pour into a greased 8 X 11 Casserole dish. Mix together the topping ingredients spread/sprinkle on top. Bake for 25 min.
