8 deseeded red peppers / 3 deseeded habanero peppers / 1
inch ginger / 3 cloves garlic / 1 grated apple / juice of 2 lemons
/ 250g brown sugar / 500g sugar / 350ml red wine vinegar / 1
tin whole tomoatoes (cherry if possible).
Blitz peppers ginger garlic apples. Mix in large pot with sugars
vinegar and tomatoes. Stir in and open boil. Leave it on a
rolling boil for 50-60 mins until it looks like thick bubbly lava.
Ladle in hot sterlised jars and seal
