2 packages (12 ounces each) Breakfast sausage links
9 eggs
3 cups milk
1 1/2 teaspoon ground mustard
1 teaspoon salt
1 package (30 oz.) froozen hash browns thawed
2 cups (8 oz) shredded 4 cheese Mexican blend
1/2 cup diced ewd bell peppers
1/3 cup finely chopped onion salsa or picante sauce (Optional)

Arrange sausage on an ungreased 15x10 inch baking dish. Bake at 375 degrees for 15-20 minutes, turning links once or until links cooked.Drain
Cool, slice sausage into I/4 inch pieces. In a large bowl , whisk eggs. milk and seasonings. Add sausage, hash browns, cheese, bell peppers,and onions. Pour into a greased baking dish. Cover and refrigerate over night.
Remove from refrigerator 30 minutes before baking. Bake, uncovered at 350 degrees for 65 - 70 minutes or until knife inserted in the center comes out clean. Let stand 10 minutes, serve with salsa or picante sauce
Serving Suggestions
With juice and or milk. Biscuits or toast is good
