     Black Bean Quinoa Burger

Ingredients
1 c black beans
1 c cooked quinoa
1 tsp cummin
lime juice from 1/3 lime
salt and pepper
2 cloves garlic minced
1/3 c onion diced fine
2 T fresh cilantro
 
1 T coconut oil
Optional- 1 tsp harrisa

Instructions
In a med bowl mash the black beans with back of a fork. Mix in all other ingredients except oil.
Make 2 to 4 patties depending on the size you like. Heat oil in frying pan over med high heat. Fry about 5 min on each side till nicely browned.
I like adding harrisa to these instead of cayenne.
Harrisa was excellent in this and cilantro. I wrapped in a lettuce leaf w tomato orange peppers and green onion. Also a smidgen of ranch dressing. Be careful w the salt as my quinoa had been cooked in broth should not have needed as much. Used as a phase 1 lunch
