     Twice Baked Potato Casserole

Ingredients
5 pounds russet potatoes
10 slices bacon
8 ounces cream cheese
1/2 cup butter, melted
1 cup sour cream
1/4 cup chives, minced
2 1/2 cups cheddar cheese, grated
2 teaspoons salt
1/2 teaspoon pepper
 

Instructions
Peel and cube potatoes. Boil for 20 minutes. Drain. Set aside. Fry bacon until crisp. Drain. Mash potatoes. Add cream cheese, butter and sour cream. Combine with potatoes. Add chives, 2 cups cheese, half of crumbled bacon, salt and pepper. Combine. Place all in greased casserole dish. Add 1/2 cup cheese. Bake for 30 minutes. Remove and garnish with remaining crumbled bacon. Serve warm.
