     Burnt Sugar Cake

Ingredients
1 c. sugar
1/2 c. butter, softened
1 1/2 c. sugar
3 eggs, separated
1 c. warm milk
2 1/2 c. flour
2 tsp. baking powder
1 tsp. vanilla extract
 

Instructions
Melt in 1 cup sugar in heavy skillet over medium heat, stirring frequently. Add 1/2 cup boiling water; mix well. Cream butter in mixer bowl. Add 1 1/2 cups sugar gradually, beating until light and fluffy. Add eggs yokes, milk and 2 cups flour, beating well after each addition. Beat for 5 minutes. Add enough burnt sugar syrup to make of desired color. Add 1/2 cup flour, baking powder and vanilla; mix well.
Fold in stiffly, beaten egg whites gently. Pour into greased and floured cake pans. Bake for 25 minutes or until cake tests done. Cool in pans for 10 minutes. Cool on rack and serve!
