     Pasta- Asian Noodles with Broccoli and Carrots

Ingredients
12 ozs. multigrain thin spaghetti
1 bunch broccoli (about 1.5 lbs.) cut into bite-sized florets
2/3 c. peanut butter
2 T. soy sauce
2 T. cider vinegar
1 T. minced garlic
1 c. shredded carrots
1/2 c. sliced scallions
Crushed red pepper for garnish
 

Instructions
Cook past according to directions, adding broccoli the last 6 minutes of cooking. Reserve 1/2 c. cooking water.
In medium bowl, combine peanut butter, soy sauce, vinegar and garlic; mix well.
Drain pasta and broccoli and return to pot. Add reserved water to peanut butter mixture and stir until smooth.
Add mixture to pasta; toss to mix and coat. Top with carrots and scallions; garnish with red pepper.
