1/3 c fresh cilantro leaves, plus more for serving
Instructions
Heat the oil in a pot. Add the carrots, onion, curry powder,
and 1/2 t each slat and pepper. Cook, stirring occasionally,
until tender, 8 to 10 minutes
Add the lentils and 4 c water and bring to a boil. Reduce to
a simmer and cook, stirring occasionally until the lentils are
very tender, 12 to 16 minutes. Stir in the lemon juice.
Meanwhile, cook the rice according to the package
directions.
Combine the yogurt, cilantro, and 1/4 t each salt and
pepper in a small bowl.
