     Slow Cooked Pork 2014

Ingredients
1 med red onion
8T cider vinegar
S&P
1/4 c sour cream
1/4 c mayo
1 pkg broccoli slaw
1 med onion diced
1/4 c tomato paste
1/4 c br sugar
 
1 T worchesterhire
1 T dijon mustard
1T cajun seasoning
1 1/2 lbs pork shoulder trimmed well and cut in 2 inch pcs

Instructions
In a med bowl mix red onion with 4 T vinegar 1/4 tsp salt and pepper. Refrigerate for garnish.
In a large bowl whisk together 2 T vinegar sour cream and mayo 1/4 t salt and pepper. Fold in Broccoli slaw.. Refrigerate for garnish.
In low cooker mix in remaining 2T vinegar and 1 med onion diced fine tomato paste br sugar Worcestershire sauce Dijon mustard Cajun seasoning mix well. Add the cubed meat. Cover and cook on low for 7-8 hours or high 4-5 hours.
We served first night with barley and wild rice and coleslaw. Second day heated the meat in remaining sauce put on tortillas and added mayo coleslaw and hot sauce. New favorite as it suited all tastes. I like a little more spicy so just added more Frank's to my portion. New favorite. I have cooked this in the oven at 350 for 2-3 hours depending on size and have used powdered stevia instead of brown sugar. Still came out great. I would like to try with toffee flavored stevia as it is supposed to taste more like brown sugar.
