In a small bowl, dissolve yeast in warm water. In a large bowl, mix
flour, sugar and salt; cut in butter until crumbly. Stir in milk and
egg yolk into yeast mixture. Add to flour mixture; stir to form a
soft dough. Cover with plastic wrap and refrigerate 2 hours.

Preheat oven to 375 degrees. Punch down dough. Turn onto a
floured surface; cover and let rest 10 minutes. Roll dough into an
8x10 inch rectangle. Spread with softened butter. Mix cinnamon
and sugar; sprinkle over butter. Roll up jelly-roll style, starting with
long side; pinch seam to seal. Cut crosswise into 24 3/4 inch slices.
Cover slices with plastic wrap until ready to flatten.

In a small bowl, mix cinnamon-sugar ingredients. Sprinkle 1/2 tsp.
mixture on wax paper; top with a slice of dough. Sprinkle with
additional 1/2 tsp. cinnamon. Roll dough into a 4-inch circle.

Place 2 inches apart on baking sheets coating with cooking spray.
Repeat with remaining slices. Bake 7-9 minutes or until golden
brown. Cool on wire racks
