     Rice with Chorizo & Ham

Ingredients
Extra virgin olive oil
1 onion, diced
1 green bell pepper
4 cloves garlic, minced
1/2 lb ham steak, diced
1/2 lb pork chorizo (no casing)
2 1/2 mugs parboiled long grain rice (uncle Ben)
1 can peas (optional)
2 cans of beef broth, 14 oz each
 
3 garlic bouillons (knorr)
Salt and pepper to taste
Cilantro chopped
Olive oil
Garlic cloves mashed

Instructions
Preheat oven to 350 degrees. Sauté onion & bell pepper in olive oil until onions translucent. Add fresh garlic & cook for 1-2 minutes. Add ham to mixture & cook for a few minutes. Add chorizo and cook until browned. Add rice and after stirring well add beef broth and 1 mug of water. Let liquid come to a boil. Add smashed garlic bouillon to broth and stir to dissolve. Add salt and pepper to taste. Place in oven for exactly 35 minutes. Once out of the oven and rice is tender, stir rice carefully with carving fork. In separate small bowl add enough olive oil aprprox 1/4-1/2 cup with mashed garlic and chopped cilantro. Drizzle this onto the rice and give rice additional flavor and stir.
