Oven at 400. Line a baking sheet with parchment paper. You don't want to crowd the pan so depending on the amount of veg you may need to use two pans.
Stir ingredients together and scatter on pan. Bake for 30 min or so till tomatoes are starting to brown and soften. Cauliflower will be turning golden but still have some crispy.
Last 5 min add in optional ingredients if using or can be added after removing from the oven.
