     Roasted Root Veg

Ingredients
butternut squash
sweet potatoes
onion
carrot
parsnips
turnip
fennel
small potatoes
olive oil
 
salt & pepper

Instructions
400 degree oven. Cut veg in similar size pcs about 1 inch. Bite size. Mix in olive oil and salt and pepper. Mix well by hand being careful not to add too much oil. Less is more. Place veg on parchment lined baking sheets. Do not crowd pans. Bake 35 to 45 min or so till veg are tender and starting to brown.
