     Carolina BBQ Sauce with a Kick!

Ingredients
1 c prepared yellow mustard
1/4 c coffee (strongly brewed or instant strong dilute)
3/4 c cider vinegar
1/2 c maple syrup
1/4 c brown sugar
1 tsp. hot chile powder (such as new mexico chile)
1/2 tsp. black pepper
1 tsp. cumin
 
2 tsp. ancho powder
1T tamari
1 tsp. smoked alderwood sea salt
2T unsalted butter

Instructions
Combine all ingredients with the exception of the tamari, smoked sea salt and butter in a medium sauce pot over medium high heat.
Bring to boil stirring regularly. Reduce heat to medium low setting to simmer and reduce heat further as mixture reduces, stirring regularly. Simmer for 30 min. uncovered.
Turn heat to lowest setting and add in tamari, smoked sea salt and butter. Cook for 5 minutes, stirring to incorporate. When finished, sauce should be reduced by 1/3.
Serve immediately as basting sauce for grilled chicken or pork and reserve to serve on side. Can be kept in tightly sealed container in refrigerator for several weeks.
