     Garlic Parmesan Crusted Steak

Ingredients
4 Filet Mignon steaks (or 1 per person)
1/2 cup olive oil
10 cloves garlic, each cut in half
2 Tablespoons fresh thyme, chopped
1 Tablespoon dijon mustard
2 cups fresh grated Parmesan cheese
salt & pepper to taste
 

Instructions
Preheat oven to 450. Place olive oil in small preheated sauté pan over medium high heat. Add garlic and sauté until soft. Transfer to small bowl & let cool for about 2-3 minutes. Then, using a fork, mash the cloves. Add thyme & mustard. Mix well into a paste. Season each steak with salt & pepper, drizzle each with olive oil, both sides. Pan seer each steak in large fry pan 3-4 minutes each side. You'll want them slightly undercooked because they will finish in the oven. Remove the steaks and place on baking sheet. Cover each steak generously with garlic paste. Top each with a generous amount of Parmesan cheese. Place in oven and bake 6-8 minutes until cheese is melted and crusty.
