Cook the zucchini in water over medium heat for about 5 minutes & drain. Meanwhile, in a skillet, brown the beef, onion & garlic. Drain of any grease. Sprinkle with Italian seasoning. Spoon into ungreased 9x13 baking dish & set aside. Add oil to same skillet. Add spinach and stir until wilted. Add zucchini to spinach & mix well. Spread over beef. Spread Marinara over this, sprinkle on cheese evenly. Bake uncovered for about 20 minutes until cheese is melted.
