Completely combine all ingredients except vegetable oil in a large bowl. Heat the vegetable oil in a large skillet over medium heat. Drop the batter carefully by 1/4 cupfuls into skillet. Press down slightly to form a patty. Fry 1-2 minutes on each side or until golden brown. Remove to a paper towel lined plate & serve warm with Cindy's Tomato Corn Salsa.
