     Chocolate Mint Cookies

Ingredients
3/4 cup margarine
1 1/2 cup brown sugar
2 Tbsp water
2 eggs
12 oz chocolate chips
2 1/2 cups flour
1 1/4 tsp baking soda
1/2 tsp salt
2 boxes Andes Creme de Menthe wafers
 

Instructions
In large saucepan over low heat, cook margarine, sugar and water until melted. Add chocolate chips until partially melted. Remove from heat and continue stirring until completely melted. Pour into large bowl; let stand 10 minutes. Unwrap the Andes wafers.
Beat in eggs one at a time at high speed. Reduce to low speed and add dry ingredients.
Drop cookies 2 inches apart on foil-lined sheets. Bake 8-9 minutes at 350 degrees. Remove. Place wafer on each cookie and let it sit approximately 1-2 minutes. Then swirl gently to melt it completely on each cookie's top. Let cookies cool completely before storing.
