     Salad- Arugula and Pear with Toasted Walnuts

Ingredients
1 T. minced shallots
2 T. extra-virgin olive oil
2 tsp. white wine vinegar
1/4 tsp. salt
1/4 tsp. Dijon mustard
1/8 tsp. freshly ground black pepper
6 c. baby arugula leaves
2 Bosc pears, thinly sliced
 
1/4 c. chopped walnuts, toasted

Instructions
Combine first 6 ingredients in large bowl; stir with whisk.
Add arugula and pears to bowl; toss to coat.
Plrace about 1 1/2 c. salad on each of 4 plates; spinkle each with 1 T. walnuts
