     Enchilada Sauce (sub for canned in recipes)

Ingredients
2 TB EVOO
2 TB whole wheat flour
4 TB chili powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp cumin
1/4 tsp oregano
2 cups organic chicken broth
 

Instructions
Heat the EVOO in a saucepan over medium heat. Add whole wheat flour and mix in for about 1 minute. Stir in the remainder of the seasonings. It will be a bit pasty. Add the chicken broth slowly, whisking in to assimilate all ingredients. Reduce heat and simmer for about 15 minutes until it thickens.
