     Minted Green Bean Slaw

Ingredients
12 oz green beans, cut bias into thin slices
1Tb shallot, minced
2Tb rice vinegar
3Tb fresh mint leaves, julienned
2Tb EVOO
Kosher salt
Ground black pepper
 

Instructions
Toss together all ingredients and season with salt and pepper to taste. Let stand, toss occasionally for at least 30 minutes and up to 2 hours. Serve.
