     Gordie and Cathy's Potato Latkes

Ingredients
4 medium potatoes
1 egg
1/2 c. flour
1/2 t. pepper
1 t . baking powder
1/2 t. salt
canola oil
sour cream
apple sauce
 

Instructions
Shred potatoes and put in colander. Rinse and pat with spoon to get water out.
Prepare egg, flour, pepper, baking powder, and salt mixture. Add to potatoes.
Fry in canola oil.
Serve with sour cream or apple sauce as toppings.
