     Nelson's Potato Salad

Ingredients
1 red mesh bag small red potatoes, diced and boiled until almost done
Light green and dark green portions of two bunches green onions, thinly sliced
40 oz Blue Ribbon bacon, fried and crumbled
1 pint Kraft Mayo or as needed
Several tablespoons yellow mustard to taste
 

Instructions
After you have boiled potatoes, drain and return them in the cooking pan to dry slightly. Then combine all ingredients and serve the potato salad immediately. If you want to make this easy to serve at a time other than when you are preparing all the ingredients, then brown the bacon, drain on paper towels, and set in the refrigerator in ziplock bag. Cut up the green onions. At serving time, boil the potatoes and reheat the bacon in a microwave before combining all the ingredients and serve immediately.
