     Vegetable soup

Ingredients
2 tb olive oil
2 cups chopped onions
2 tsp Italian seasoning
Salt and pepper
5.5 cups vegetable stock (43.5 oz)
1 28oz can diced tomatoes with juice
1 tb tomato paste
8 cups mixed vegetables
--corn, green beans, squash, zucchini, potatoes, carrots
 

Instructions
Heat oil in a large stockpot over medium heat. Add onions and Italian seasoning, season with salt and pepper. Cook, stirring frequently, until onions are translucent 5-8 mins.
Add broth, tomatoes and their juice, tomato paste and 3 cups water to pot. Bring mixture to a boil. Reduce to simmer and cook uncovered for 20 mins.
Add vegetables to pot and return to a simmer. Cook uncovered until vegetables are tender about 20-25 mins.
