     Braised Chicken in Lemon, Garlic and Rosemary

Ingredients
Chicken breast about 650g - Serve 3 portions. You can use drum sticks or whole chicken and cut it.
2 small red chillies chopped
1/2 cup white wine
Strips of peel from half a lemon
1/4 cup lemon juice
1/2 cup chicken stock
2 tablespoons olive oil
30g butter
4 cloves garlic, crushed
 
1 tablespoon rosemary leaves

Instructions
Heat oil and butter in a large frying pan.Add chicken pieces in single layer, make 3 cuts on each chicken piece if it is breast, so it will cook well from inside.Cook over medium heat until browned. Turn chicken occasionally to prevent sticking. Add garlic , rosemary, chilli and wine. Cover pan, reduce heat to low and simmer for 40 minutes or until chicken is tender. Remove chicken and keep warm. Scoop excess fat from the surface of the pan juices. Add lemon peel,lemon juice and stock . Bring to boil, cook 3 minutes. Pour over chicken pieces to serve. If you like, serve it with vegetable mix. -)
