1/2 tsp cajun seasoning (prepared or homemade - see below)
1/3 cup all-purpose flour
1 large egg
1/4 cup milk
1 3/4 lbs. catfish fillets, cut in bite-size pieces
1 1/2 cups Japanese-style bread crumbs (panko)
vegetable oil to fill a frying pan 1/2 inch
3/4 cup mayonnaise
1/4 cup spicy seafood cocktail sauce
2 tsps lemon juice
1/4 tsp ground red pepper
1/2 tsp Old Bay Seasoning (to taste)
Instructions
Combine the salt, cajun seasoning, and flour in a bowl. In
another bowl, whisk together eggs and milk. Put the bread
crumbs in a third bowl. Dredge the fish pieces in the flour,
then dip in the eggs, and then finally dredge them in the bread
crumbs.
Heat the oil to approximately 375 degrees (slightly bubbling).
Fry the catfish pieces about 2-3 minutes on each side, or until
golden brown. Drain on paper towel and serve with the spicy
dipping sauce.
Spicy dipping sauce- combine the mayo, cocktail sauce,
lemon juice, red pepper, and Old Bay in a bowl. (Can be
made ahead of time, covered, and chilled.)
Emeril's Cajun Seasoning- 2 1/2 Tb paprika; 2 Tb salt; 2 Tb garlic powder; 1 Tb black
pepper; 1 Tb onion powder; 1 Tb cayenne pepper; 1 Tb dried oregano; 1 Tb dried
thyme. Makes 2/3 cup of seasoning.
