4 Aidells Andouille Sausage Links, chopped then diced
Instructions
Preheat oven to 375 degrees. In a large skillet saute the onion, red pepper, jalapeno in the oil. Add the shrimp, sausage & seasoning. Set aside. In a large mixing bowl combine the corn muffin mix, eggs, whole kernel corn, sour cream & butter. Mix until all is well combined. Add sausage mixture. Stir to combine all. Pour batter into greased 9x13 baking dish. Bake uncovered for 1 hour or until toothpick/knife inserted in center comes out clean. 10 minutes before end of baking time, carefully sprinkle shredded cheese over top & return to oven until cheese is melted and golden. Let this stand 2-3 minutes before serving.
