Preheat oven to 375 degrees. In a large skillet saute the onions, garlic & celery in the oil until soft. Remove from heat source to cool enough to handle. Stir in peaches & stuffing mix. In a small mixing bowl whisk the ginger, vinegar & marmalade. Set aside. Take each chop or breast and spoon on about 2 heaping tablespoonfuls of peach mixture. Spread to cover meat then carefully roll & secure with toothpick. Place each piece of meat in a 9x13 ungreased baking dish. Drizzle each with the marmalade mixture. Bake for 1 hour. REMEMBER TO REMOVE TOOTHPICKS before serving!!
