     Chicken Parmesan

Ingredients
4 skinless boneless chicken breast, halved
1/4 cup flour
1 cup bread crumbs
1 tbsp basil
1 tbsp thyme
1 tbsp oregano
1/2 cup grated parmesan cheese
1 egg
1/2 cup milk
 
Olive oil
8 slices mozzarella cheese
Marinara sauce, 1 jar

Instructions
Pound the chicken breasts between two slices of plastic wrap until about 1cm thick. Season with salt and pepper. Dredge chicken in flour and shake off excess. Dip in egg/milk mixture, then in breadcrumb/Parmesan/herb mixture.
Heat 2 tbsp olive oil in a large deep skillet. Brown the chicken breasts 2 at a time over medium heat until golden on each side (about 2-3 min per side). Remove to oven to keep warm. Replenish oil as needed.
In a pot, heat marinara sauce. When hot, sauce the chicken. Place a slice of mozzarella on top, garnish with parmesan. Broil in oven until cheese has melted.
Serving Suggestions
Serve with gnocchi.
