     Strawberry Cake

Ingredients
1 yellow cake mix
1 pkg. strawberry jello, 3 oz.
3/4 C. vegetable oil
1/2 C. water
4 eggs
1/2 C. frozen strawberries, thawed
Icing-
2/3 C. margarine, softened at room temperature
 
2 C. sifted powdered sugar
2 egg yolks
1 tsp. vanilla
food coloring (optional)

Instructions
In large mixing bowl, stir together cake mix and jello. Add oil, water and eggs and beat with electric mixer on high for 3 minutes, scraping sides often. Add strawberries and continue beating until thoroughly blended.
Pour batter into greased and floured pan. Bake in pre-heated 350 degree oven for 30 minutes or until toothpick comes clean from center.
For icing, using a large spoon, cream margarine with 1/4 of the powdered sugar in a medium sized mixing bowl. Add egg yolks and beat well with mixer.
Add sugar a little at a time and continue beating until thick and creamy. Blend in vanilla and food coloring. Beat until smooth, refrigerate several hours or overnight, frost cake right before serving.
Serving Suggestions
Works well for cupcakes, check box for baking times.
